Cauliflower crust pizza

Our endocrinologist Dr. Vidhya Illuri started Doctor’s Pantry to help her patients stay healthy. Who doesn’t love pizza? Dr. Illuri’s cauliflower crust pizzas are not only delicious, but also diabetic friendly!

Cauliflower crust:
Preheat oven to 400 degrees
1 (12 oz.) package of riced cauliflower
1 egg
1/3 cup shredded Parmesan cheese
1/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
Bake 25-35 minutes.

Cheese pizza:
4 Tbsp. sugar-free tomato sauce
4 Tbsp. shredded mozzarella
Handful of basil
Bake 8-10 minutes.

Pesto pizza:
4 Tbsp. pesto
3 Tbsp. goat cheese
½ cup mushrooms
1 diced bell pepper
Handful of arugula
Drizzle of balsamic glaze
Bake 8-10 minutes.
